We are a Japanese street food concept. Takoyaki (with ‘tako’ meaning octopus  and ‘yaki’ meaning cooked over heat) is a Japanese street food that has been around since 1935. It’s a pan-fried, fluffy, and creamy round ball with a piece of octopus at its center.

In Japan, the city of Osaka is most renowned for its street food, and if you want the best Takoyaki, that’s where you go. I want to bring the authentic Osaka-style Takoyaki experience to Sydney, Australia.

At Takoyaki Stand, we specialize in OSAKA-STYLE Takoyaki. Just like in Japan, we focus our energy on delivering the highest quality product to our customers. By concentrating on one dish, one style of cooking, and one product, we strive to make it as perfect as possible. Through this commitment, we continually elevate the quality, skills, and knowledge needed to create our specialty—delicious Osaka-style Takoyaki.

About the CHEF

Thomas O’Regan

Over a 10-year career as a chef, I worked my way into some of the best kitchens Australia and the UK have to offer. Some of these restaurants have been rated among the top 100 in the world by the World’s 50 Best Restaurants guide. I’ve had the privilege of working under Chef Peter Gilmore at Quay, Sydney; Chef Dan Hunter at Brae, Victoria; Jock Zonfrillo at Orana, South Australia; and Brett Graham at The Ledbury, London (ranked number 10 best restaurant in the world).

I love food and everything to do with it. I travel to explore the world and discover what exotic or different cuisines have to offer. I have always been deeply interested in Japanese cuisine. During one of my trips to Japan, I ate something so delicious that it changed my life. It was from a busy little street food vendor I saw after popping out of the subway. There was a bit of a line, but I knew anything good was worth waiting for, so I waited. When it was my turn to order, I discovered they only sold one item on the menu: TAKOYAKI. I ordered the only item available and was handed a piping hot tray of fluffy octopus-filled balls, topped with a generous amount of dark brown Umami Takoyaki sauce, Kewpie mayo, and a strange wiggling fish flake that looked alive—I’d never seen anything like it before. I thought to myself, ‘I’m here for adventure and trying new things,’ so I picked up the first fluffy, creamy ball covered in sauce and bonito flakes and popped it in my mouth… It was delicious! I was in heaven; I couldn’t get enough! This is the moment that changed my life. Now, back in Sydney after 6 years, I’m bringing that experience from the streets of Japan here for everyone to try, without the plane ticket and travel time.

In Sydney, it is hard to come by Takoyaki and even rarer to find good Takoyaki. When done right, Takoyaki is the most delicious thing. As a chef with 10 years of training in some of the most highly rated restaurants in the world, I draw on my experience to bring Sydney the most delicious and best possible Takoyaki experience.
